HONOLULU (HI Now) - What started as a family restaurant favorite in 1967 at the historic Kemo’o Farms Restaurant in Wahiawa has grown into an iconic island tradition.

Surrounded by lush pineapple fields, Dick Rodby crafted a cake that captured the true spirit of aloha. Made with sweet local pineapple, roasted Big Island macadamia nuts, and fresh coconut, this dessert offers a delicious taste of Hawaii history.

The bakery remains dedicated to using high-quality ingredients, entirely avoiding artificial food dyes and high fructose corn syrup to keep the flavor pure and natural.

Local food lovers and visitors can experience these classic cakes and new treats in person at the upcoming Made in Hawaii Festival. Located at Booth 505 on the third floor of the Hawaii Convention Center, the booth will showcase their premium packaging, including beautiful gift boxes featuring a signature pineapple cutout window.

Guests can check out the flagship Original Happy Cake with its glazed apricot top layer, the tourist-friendly Mini Rum Happy Cake, and the buttery Mini Round Shortbread Cookies filled with real pineapple and coconut.

The festival runs Friday from 6:30 p.m. to 10 p.m., Saturday from 8 a.m. to 10 p.m., and Sunday from 8 a.m. to 7 p.m.

If you cannot make it to the convention center this weekend, you can also plan ahead and find a special Hawaiian Happy Cakes table in the bakery section at Don Quijote Kaheka and Kapolei.
