HONOLULU (HI Now) - HI Now Daily shows how you can kick off the new year with a delicious and festive punch recipe perfect for brunch celebrations, complete with a tropical twist and a unique Lilikoi-Guava sugar rim. Adding a local touch, Diamond Bakery cookies are incorporated into the presentation, bringing a sweet island flair to the celebration. Lilikoi Guava Sugar Rim Ingredients:
- Course Natural Sugar
- 3 Diamond Bakery Lilikoi Shortbread Cookies
- 3 Diamond Bakery Guava Shortbread Cookies
- Orange Juice
Punch Ingredients:
- Orange Juice
- Cran-Pineapple
- Sparkling Water OR Champagne Garnishes:
- Raspberries
- Orange slices
Instructions:
- In a large pitcher or carafe combine 2 parts orange juice with one part cran-pineapple juice and ice. Stir in oranges and raspberries.
- Place lilikoi cookies in a food processor and grind until very fine, mix with sugar and pour onto half of a plate.
- Repeat step one using guava cookies and pour onto the other half of the plate.
- Dip the rim of each glass into a shallow bowl filled slightly with orange juice. Then dip the rim into the cookie sugar mixture lining the rim.
- Add ice to each glass and fill 2/3 of the way with the juice mixture.
- Top with sparkling water OR champagne.
- Garnish with orange slices and raspberries and have a very Happy New Year!
