Recipe: HDS Farmers Market Stir Fry

Marinated Ginger Pork, Ho Farms Melange Long Beans, Butternut Squash & Eggplant

Serves 4 People

For the Stir Fry Prep:

12 oz Pork Sirloin Sliced thin

Marinate in 1 cup pork Marinade

1 cup Japanese eggplant ( 1 whole cut into 2 inch strips)

1 cup butternut squash ( peeled/quartered/sliced thin)

Half Onion (Peeled/Julienne/Sliced thin)

1 cup Chinese Long beans (Cut 1 ½ inch sticks)

½ cup Aburaage ( Fried Bean Curd, Sliced ½ strips)

4 tbspns Grape Seed Oil

Salt and Pepper to taste

2 tbspns Bonito Flakes

Procedure: Pre-heat the wok or large sauté pan in medium high heat, pour grape seed oil in the wok than add thinly sliced pork and stir or toss for 1 minute. Then add onion and eggplant sauté for 1 minute, next add butternut squash and long beans cook for 30 seconds. Then add Aburaage. Continued stir fry and mix finished with Stir fry sauce incorporate well and shut off the heat. Then plate in the bowl with steamed rice or sweet potato salad and garnish with Bonito flakes.

For the Marinade Sauce:

2 tbspns Red Miso Paste

2 tbspns Ground Ginger

¼ cup Sake

¼ cup Soy Sauce

1 tsp Sesame Oil

1 tbspn Toasted Sesame Seeds

½ cup Water

2 tbspns Sugar

½ tsp Sambal Chili Paste

1 tspn Cornstarch Slurry

Procedure: In the mixing bowl, please whisk all ingredient (except Cornstarch Slurry) well until Miso and sugar is dissolved. Save half of the liquid to marinade the pork and the other half into medium pot and bring to a boil on high heat and whisk in corn starch slurry to thicken. Pull off heat and set aside for stir fry.
