According to co-founder of Kūnia Country Farms Jason Brand, the farm provides 5,000 pounds of lettuce a week to make one of the eatery’s favorite dishes, Korean Fried Chicken Salad. The volume necessary to supply 24 Zippy’s locations on Oahu has allowed local producers like Kunia Country Farms to scale up business, and make large strides toward food sustainability in Hawaii.
Francis and Charles Higa founded Zippy’s Restaurants 52 years ago on South King Street in urban Honolulu. Now, with 24 locations across Oahu, Maui and Hawaii Island, Zippy’s has grown to be a beloved island institution. Kunia Country Farms began operations in 2010, and is now one of the largest aquaponic farms and producer of leafy greens in the state of Hawaii.
