HI Now host Kanoe Gibson is with Sous Chef Cameron Seto making the restaurant’s Friday special: Yellow Thai Curry Soup with Chicken.
In addition to its menu and daily soup specials, Nico’s Kailua is always thinking up new dishes for guests to try. For lunch, try out its daily fish taco special. “When I think of tacos, it’s always gotta be fresh with pico de gallo,” says Sous Chef Seto.
If you’re thinking about dining at Nico’s Kailua for dinner, be on the look out for the appetizer and catch of the day special, which will utilize the fresh fish the restaurant has in house that day. And if that’s not enough choices already, the restaurant also offers entree specials. Whether’s it’s a special using a whole fish or a rack of lamb, Nico’s Kailua is always changing things up. “There’s a lot of creative energy flowing in this kitchen,” Sous Chef Seto says.
Recipe: Yellow Thai Curry Soup with Chicken
2 lb boneless skinless chicken thighs
3 cloves of garlic, minced
1 red bell pepper, diced
1 medium carrot, sliced
1 white onion, diced
1/4 cup yellow curry paste
1 tbsp grated fresh ginger
8 cups chicken broth
2 cans coconut milk
1 tbsp fish sauce
3 tsp brown sugar
3 green onions think sliced
1/2 cup freshly chopped cilantro leaves
1/4 cup chopped fresh basil leaves
3 tbsp fresh lime juice
