Nico’s Kailua is now serving up fish taco specials for lunch — a different one every day, Monday – Saturday! HI Now host Kanoe Gibson is with Chef Lawrence Ozoa, Chef de Cuisine at Nico’s Kailua as he whips up delicious Dynamite Fish Tacos with Ginger Miso Slaw. You can even try out his recipe and make it at home too!
1) Sauce for the Fish Taco:
Use a mixture of Kabayaki, Nico’s Spicy Aioli, and Sesame Oil for the sauce.
Kabayaki – Eel sauce: Soy sauce, Marin, Sugar. Can by made from almost any market.
Nico’s Spicy Aioli: Mayonnaise, Sriracha, Sesame oil.
2) Mix slaw in Nico’s Ginger Miso dressing
Slaw: Shredded carrots, cabbage, and green onions
Ginger Miso dressing: Mayo, finely grated ginger, Dijon mustard, honey, soy sauce, rice wine vinegar, olive oil, sesame oil, and miso paste.
3) Fresh fish crusted with Mochi Crunch Crust.
Use about 3 oz. of fish per taco. (Fish used is usually the catch of the day at Nico’s Kailua.)
Mochi Crunch Crust: Blend furikake and bubu arare in a food processor
4) Crust the fish with furikake and bubu arare and finish the fish in a hot lightly oiled pan or in this case on the flat top.
5) Heat a 6″ flour or corn tortilla in a pan or in this case flat top.
7) Once the fish is cooked and the tortilla is heated, line the bottom of the taco with slaw and add sauce over it.
