Makana Market & Deli in Kaka`ako is doing something unique with its meat. Chef Ignacio Fleishour is working with a co-op of hunters on Molokai to bring fresh deer straight to his tables. His goal is promote good food and introduce new ways of using local products.

Chocolate Venison Rack

Rack of Venison
Sprayed with Olive oil and covered in a rub of
Ghirardelli Chocolate
Garlic
Onion
Cumin
Cayenne

 Then grilled on open fire for 5 minutes on each side or to
preferred temperature (recommend medium rare).

Served with house made Chimichuri Sauce.
