M by Chef Mavro was created by owner and chef Jeremy Shigekane as an affordable “at-home” gourmet meal experience. The purpose is to offer good food to the community featuring quality local ingredients without breaking your bank account. Shigekane is a rising star chef with a pedigree of working at fine-dining restaurants in New York City, San Francisco and Hawaii, and HI Now host Kanoe Gibson got to check out the restaurant’s new offerings.

M by Chef Mavro offers a number of affordable gourmet offerings:

– M two for $20 meal offering: Reheatable prepared food with dessert (Available Wednesday – Saturday)

– M CSA Gourmet Box or M CSA European-style Market Bag (Thursday and Saturday pickup)

– M’s prepared foods: M Sauces and Stocks to make several gourmet meals at-home (Available Wednesday – Saturday)

M Meals offers fresh, local, gourmet dishes and features new menus every week. It’s like launching a brand-new restaurant every time!

“Everything’s based on what we receive from our local purveyors and then my team and I get together and create the menu,” explains Shigekane. “M’s foods are thoughtfully crafted and curated and made with lots of love!”

Shigekane says the restaurant is barely breaking even on profit, but M was a concept he dreamed up and started prior to the pandemic.

“I had just launched a new lunch concept and then when everything hit us, it sped up the process to roll-out M, and it’s been an amazing, crazy and fun ride ever since!” he says.

Shigekane explains that Chef Mavro does this all for the community because the staff there wants to feed Hawaii good food, that’s tasty and nutritional, and also support local small businesses like farmers, fisherman and purveyors.

“M’s foods are 99 percent local, and you’re literary getting farm-to-table anytime you’re eating from us!” he says.

For its M CSA Box, the restaurant partners with De La Mesa Farms in Waimanalo. While it serves as your weekly produce, it’s conceptualized to be a lot more than your usual CSA Box. Shigekane explains the idea as getting a French Market Bag.

“We include other farmers and purveyors items and then add-in our M touch: A marinated local protein, house-made bread, M Sauces and Dessert along with recipes and directions to cook at-home,” he explains. “Like our menus and all our foods at M, everything is crafted and created weekly and paired perfectly with the produce and ingredients in the M Box.”
