Japanese cuisine using the finest ingredients Hawaii has to offer

If you’ve been to Japan, you know good sushi, but now you don’t need to travel thousands of miles to get it! Hihimanu Sushi in Honolulu is serving up both traditional and contemporary dishes. HI Now host Kanoe Gibson went to check out some of the restaurant’s offerings.
“We opened Hihimanu Sushi here in this location Jaunary 2019. Traditional elements with a modern flare,” explains Sous Chef Makana Conceicao.
Hihimanu Sushi specializes in omakase, or chef’s choice. There you can find sushi and sashimi using the finest ingredients Hawaii has to offer. The restaurant provides the freshest ingredients as well as fish flown in from Japan, with a seasonal variety that’s always changing.
“Most of it comes directly from Japan,” says Conceicao. “We do get local tuna. Hawaii is heavily influenced by Japanese, so it’s only natural for us to have some of their cuisine.”
The omakase course is $185 for 18 dishes. The restaurant also started offering omakase lunch, which is 15 dishes plus desert for $135 per person. There are only three omakase dining times daily: 2 p.m., 5 p.m. or 7 p.m. Any allergies will need to be noted prior to the reservation date so a special menu can be prepared.
Owner and Executive Chef Ray Howard was raised in Okinawa, Japan and has been cutting traditional sushi all over Hawaii restaurants for over 20 years. Hihimanu Sushi serves to bring Chef Howard’s sushi creations to life, incorporating unique ingredients and techniques to make each bite burst with flavor.
“My concept is basically Edomae-style sushi with a twist,” says Raymond Howard, the restaurant’s chef and owner. “Edomae, traditional cuts with a contemporary flare. So adding my own flavors onto traditional sushi cuts.”
Howard makes all his sauces from scratch and everything is made in house, including the microgreens used on the dishes.
Hihimanu Sushi also offers takeout from 12 – 2 p.m. and 4 – 5 p.m. Ingredients are ordered or prepared fresh in anticipation of reservations.
