Raise a glass to the chef's pickled onion rings!

It may have started with beer, but Hana Koa Brewing Co. isn’t just a brewery! HI Now host Kanoe Gibson got a tour of the new spot and a taste of its globally inspired local cuisine.
“We built this company on beer, but we wanted to offer more,” says owner Josh Kopp. “So we’ve just been here trying to create a place where everybody can kind of take a break from the woes of normal work days and kind of build community.”
All of the beers on tap at Hana Koa Brewing Co. are brewed on site. Its in-house brewing system is one of the most efficient in the state with steam boilers powered by gas. The brewing process itself takes anywhere from two to eight weeks.
“We really want to make beers that while they’re complex and nuanced, they still have the ability to go down easy,” says Kopp. “Beer is such a complex drink that’s really kind of built civilization, but at the same time, it’s something that really brings people together. It’s a catalyst for conversation.”
However, beer isn’t the only star at the brewery! Chef Chris Wong is whipping up dishes sure to satisfy any foodie. While you can find bar food like burgers and onion rings, these classics are taking on a new identity with a local twist. Chef Wong’s in-house burger is made with ribeye, chuck, and brisket, then topped with spicy house-made pickles. Add some of his pickled onion rings, Hawaiian-style Maui pickled onions, and you’ve got yourself a winning meal!
Some other unique dishes to consider include the smoked marlin bruschetta made with local fish. Try it, and you’ll see that it’s the smoky flavor that makes it so addicting! There’s even an option for ramen lovers — a pork-based tonkatsu ramen. The stock is made in house from scratch.
