Get ready for some upscale comfort food! Chef Colin Hazama is back, and this time he’s joining host Kanoe Gibson in the HI Now kitchen. Hazama recently launched his new dining concept, C4 Table, and will be demonstrating some of his specialty dishes.
On the menu today? Hazama’s Kaffir Lime Scented Beer Battered Fish. That includes Shaved Wailea Hearts of Palm, Stir-Fried Wok Vegetables, Aromatic Garlic Jasmine Rice, and Coconut Thai Curry.
Hazama’s goal with C4 Table is to showcase upscale comfort cuisine by using local farmers, local products, and keeping it homey.
Hazama also made a Garlic Shrimp Truck Scampi, which includes a Lemon Pistachio Pesto, Ho Farms Tomato Raisins, Garlic Confit, Garlic Basil Butter. Finally, he ended with some Kiawe Smoked Roast Pork Belly Bacon, which has “Kewali Style” Ho Farms Tomato, Long Bean Relish, and Aromatic Garlic Rice.
You can find Hazama and his delicious C4 Table creations at Kaiser Farmer’s Market. He also does catering for small, private gatherings. When it comes to cooking at farmers markets, everything is made fresh to order, but you can also order ahead of time to pick up.
“We have a lot of pre-sale,” Hazama explains. “So when you want to just come and pick it up, it’s safe. Social distancing — come and pick up your food, and then you’re out the door.”
During the week, Hazama usually has a beef or pork dish, a seafood dish, and once in a while he’ll have a chicken dish.
Hazama also does pop-ups from time to time. Right now, he’s popping up at M by Chef Mavro. All you have to do is order your meals ahead of time and head to the restaurant for drive-through pick up. As simple as that!
