One thing you have to try on the $5 food menu? The Big Island Grass-Fed Cheeseburger, their most popular item. So what makes the Merriman’s burger so good? The restaurant uses local grass-fed beef, a special blend of brisket and chuck, and it’s all served on house-baked bun made fresh daily. Merriman’s also uses fresh Nakano Farms Vine ripe tomato, fresh Hirabara lettuce, caramelized onions, and cheddar cheese.

The $5 food menu also includes: Kalua Pig Quesadilla, Maui Onion Soup, and Fresh Hawaiian Fish Ceviche. Below you’ll find the recipe for their Fresh Hawaiian Fish Ceviche so you can make it at home, too!

Ingredients:
Fresh ono, Hawaiian sea salt, Ai farms Tahitian lime, Aloha brand coconut cream, Maui onion, cucumber, fresh jalapeno, shaved radish from Ma’o farms, fresh cilantro from Ma’o farms, young coconut, taro chips

Directions:
1) Remove skin and dark meat from fish, dice
2) Place in stainless steel or glass bowl and sprinkle with salt
3) Use spoon or spatula to gently toss and turn over in a folding motion
4) Cover with plastic wrap and let sit for 30 minutes at room temperature
5) Add lime juice and toss
6) Cover with plastic wrap and let marinate in fridge for 1- 4 hours
7) Remove and drain lime juice
8) Add coconut milk, onion, cucumber, jalapeno (and whatever else you choose!)

In 2010, Portland-native Chef Vince McCarthy moved to Kauai to get away from the city life. A self-taught cook, Chef Vince took a job at Merriman’s Poipu, on the island of Kauai. Within two years, Chef Vince had mastered every station in the kitchen and was promoted to sous chef. Recognized for his hard work and dedication, in 2015 Chef Vince was promoted to the executive chef position at Merriman’s Big Island location in Waimea town. This June, he helped opened the much anticipated Merriman’s Honolulu where he is now cooking up a storm as the executive chef.
