It's not Cinco De Mayo without a taco platter
Celebrate Cinco De Mayo from home with take out from Taqueria El Ranchero! HI Now hosts Kanoe Gibson and Kainoa Carlson are in the kitchen trying out some dishes from the Wahiawa restaurant, and they’re whipping up some Li Hing Pineapple Margaritas to go with it.

Taqueria El Ranchero offers some delicious authentic Mexican food. Add the beef fajitas to your must-try list! The restaurant even offers a taco platter that comes with seven types of meats to choose from (chorizo, chicken, beef tongue, tripe, carnitas, al pastor, and carne asada). Why not throw in an order of elotes while you’re at it? And Tres Leches cake for dessert, of course.
Try adding a Li Hing Pineapple Margarita to your Cinco De Mayo celebration with this recipe:
1 ½ oz. white tequila
½ oz. Triple Sec
Juice from half a lime
1 oz. sweet and sour mix
1 oz. pineapple juice
1/4 tsp li hing mui powder
1) Add tequila, Triple Sec, juice from half a lime, sweet and sour mix, pineapple juice and 1/4 teaspoon li hing mui powder in a cocktail shaker with ice. Shake well for about 30 seconds!
2) Coat rim of glass with lime juice
3) Put additional li hing mui powder on a small plate and rim the glass with powder
4) Pour contents of cocktail shaker into rimmed glass
5) Garnish with a lime
