Calling all meat lovers! You won’t want to miss out on this. HI Now host Kainoa Carlson is headed to Butcher & Bird at SALT in Kakaako to get a closer look at what Head Butcher Chuck Wakeman and his team are doing with deli meats and dry-aged steaks.
Butcher & Bird is Hawaii’s premiere full service butcher and deli shop. There you can find locally sourced specialty meats, house crafted sausage and charcuterie, along with a full deli serving a variety of sandwiches and salads.
“We’re full-service, so that means you come into the shop and you’re gonna talk to an experienced meat-cutter or butcher, and they’re gonna help you get the right cut for whatever dish you’re trying to make,” Wakeman says.
Wakeman was formally trained as an apprentice in a small mom and pop butcher shop in the Lincoln Park neighborhood of Chicago to the title of journeyman. Here in Hawaii, he has worked at the Whole Ox, Vintage Cave, Pig & The Lady, Lunchbox, and finally Whole Foods before opening Butcher & Bird.
“We carry USDA Prime Beef which is a top-rated beef,” he says. “We dry-age in house, 30 days, which is tough to find retail. It allows the meat to develop more flavors. It evaporates water out, it intensifies flavor, and it makes it more tender.”
At Butcher & Bird, the team even cures its own bacon and smokes it in house. You can even find smoked brisket and smoked ribs.
