Alaia supports local farmers to create spectacular dishes

Most of Alaia’s ingredients are resourced locally in Hawaii. In fact, they source a fair amount from Kuilima Farm right across the street! Alaia is all about supporting local and uses the freshest of ingredients to create amazing dishes for their guests.

Executive Chef Gilles Epie shows us the perfect salad to compliment any of their main courses. Chef Epie starts with an Italian vinaigrette mixed with dry herbs, sugar, and spices to create a sweet, sour, and spicy dressing. He then pours it into a bowl and dips a whole head of locally grown red leaf lettuce in. After, he tops the salad off with black pepper, panko with dried onions and garlic for texture, pecorino romano cheese, and parmesan cheese. It’s an easy recipe that even you can try at home!
