Shelton is demonstrating how easy meal prep can be by making three simple meals from one chicken:
1) Rotisserie Chicken and Steamed Veggies
2) Zoodles and pasta sauce with chicken
3) Chicken salad lettuce wraps with tomatoes
“It’s all about staying budget friendly, but at the same time eating delicious meals so you never feel deprived!” Shelton explains.
Shelton began her health journey after she competed her first Honolulu Marathon in 2018 at one of her heaviest weights, which was close to 300 pounds. She also started following a strict Ketogenic lifestyle and incorporated exercise into her daily routine. Becoming a better mother was just one motivator behind Shelton making changes to get healthy.
“My health was failing,” Shelton said simply. “I had no energy to play with my three kids, and I started to see my unhealthy habits trickle down to my daughter, so I knew I needed to make a change.”
To those looking to start their own health journey and make better choices, Shelton says just start.
“Wake up one morning and tell yourself, ‘You know what? Today, I am going to take a 15 minute walk during my lunch break,’ or ‘I am going to drink two cups of water today instead of one soda,'” she says. “Those small little changes will make a huge difference in the long run.”
Today, Shelton has started her own wellness program: Evolve360. Its goal is to help individuals on their own health journeys.
“We focus on the overall aspect health — not just the physical, and people have been having amazing results so far!” she adds.
