Due to the COVID-19 pandemic, restaurants have had to pivot and get creative during these challenging times. That’s why Mad Bene and DB Grill partnered together in order to serve both menus out of the same kitchen. HI Now host Kainoa Carlson is out at Kapolei Commons to get a taste of what each has to offer for take out.
“Since the shutdown and everything, we decided to be proactive and create our own little bubble here,” says Chef de Cuisine Brenton Lee. “So we collaborated with all the chefs from DB Grill, the chefs from Mad Bene, all working together and being able to serve the full spectrum of food here.”
From spaghetti and meatballs to chicken parm, the red sauce joint serves classic Italian-American comfort food craved by many on the East Coast. Driven by the desire to bring that flavor to Hawaii, Mad Bene sources the best ingredients and make all its pastas in-house.
“Mad Bene was born out of my time in New York City, which was really the formative years of my culinary and personal life.” says Executive Chef Bao Tran. “I wanted to bring a taste of New York City to Hawaii.”
Tran says the deliciousness of Italian and Italian-American food comes from handmade dishes. The restaurant even has a Forza Forni pizza oven all the way from Italy, so you know you’re getting some quality food. The pizza on the menu you can’t miss? The NYC Pizza, of course!
